Menu Options
 
Many of the meats below are avaialble as a sandwich or as an entree for a meal.   We will work with you to create a custom menu for your event that is within your price range. 

 

Meat options:

 Pulled pork can be served sandwich style or as an entree. 

 St Louis cut rib sampler (3 bones)

 St Loiis cut ribs 1/2 slab

 St Louis cut ribs full slab

 Baby Back ribs available upon request but we recommend using St Louis cut ribs as they are meatier and have more flavor when smoked.

Chicken lollipop - drumstick with carmelized BBQ sauce

Chicken thigh - traditional BBQ sauce

Chicken Wings - smoked & BBQ

Half Chicken

Beef Brisket can be served sandwich style or as an entree.

Beef Tenderloin  can be served sandwich style or as an entree.

Pork Loin – traditional BBQ sauce or marinated.  Can be served sandwich style or as an entree.


Appetizers:

Pig Candy – bacon and brown sugar served hot – it’s extremely popular and there are never leftovers.

Jalapeno poppers – ½ jalapeno seeds removed, filled with cream cheese, small piece of pulled pork then wrapped in ½ slice bacon and dusted with rub.

Chicken lollipop - drumstick with carmelized BBQ sauce

Sides

Served in 4 oz serving cups (recommended) or on divided plate.

Recommend 2 or 3 for a meal.

Recommend 1 or 2 with sandwich

 

BBQ beans – beans with pulled pork, peaches, raisins, onions, bbq sauce and other seasonings.

Cole slaw – using Marzetti’s southern slaw dressing.

Twice baked potatoes - smoked

Cheezy potatoes

Green Beans
